Recipe: Blackened/Seasoned Pork Chops

I've mentioned before how terrific Emeril's Essence Seasoning Mix (http://www.food.com/recipe/emerils-essence-5031) is for almost anything.  I've shared recipes using it.  Well, here is another!

Bring to 2 thick (about 1.5") to room temperature.  Have your Essence mix handy.  Sprinkle heavily each side and let rest a few minutes as you prepare the frying pan.

Add about 3-4 tablespoons of oil to the frying pan and turn heat on med-high.  Get the pan hot (the oil will glide very easily on the pan - but don't burn the oil).  Place your pork chops in the pan and cook each side about 6 -8 minutes.  It will smoke a bit, and your eyes might water, but the end result is the best pork chops ever!  The pork chop seasoning will "blacken" them and if you like hot and flavorful, then you'll enjoy this recipe too!

Serve it up with cauliflower and brocoli...the pork chops and juicy and full of flavor!
