Recipe: Coconut Madeleines

This is such an easy "cake" to make....bake a batch and freeze them for a mini dessert anytime.  The Madeleine tray has 12 molds.  I bought 2 trays to make baking easier and faster since the recipe makes 24 little Madeleines.  I bought the baking trays at Bed Bath and Beyond!
Coconut Madeleines
Ingredients:
1 stick of UNsalted butter - melted and cooled to room temperature
3 extra large eggs
2/3 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
1 cup flour
1/4 cup corn starch
1/2 teaspoon Baking Powder
1/4 teaspoon salt
1/3 cup (packed) sweetened shredded coconut (plus a little to sprinkle)
Zest of 1 lemon
BEGIN:
Preheat oven to 375 degrees
Butter and flour the Madeleine pan(s) and add a tiny sprinkle of shredded coconut to each mold.
Step 1 - Beat at medium speed the eggs, sugar and vanilla & lemon extract 2-3 min
Step 2 - Add the butter and beat 1-2 min
Step 3 - Stop the mixer; add the flour, corn starch, baking powder and salt. Now beat for 3-4 minutes...it will look like frosting consistency.
Step 4 - Remove bowl from mixer and gently fold in the coconut and the lemon zest.
Step 5 - Place/drop a generous teaspoon of batter into each mold - do not spread it out; it spreads out in the oven!
Step 6 - Bake in oven 10-15 minutes (mid-level)...I use two oven racks since the baking trays don't fit side-by-side in my oven. The lower tray may brown a minute or two before the upper tray.

Step 7 - Remove from oven when edges are just getting brown but tops are still pale. (You can see in the photo the "ridged" underside is golden brown and the top side of the one Madeleine is pale.  The "spots" on the bottom of the Madeleines are from the sprinkled coconut)
Step 8 - Set on cooling rack.  Carefully remove the Madeleines (we use a toothpick) from the tray and place on another cooling rack.
Once cooled, you can freeze them in a freezer bag for use anytime! (They defrost very, very quickly)  These are so quick and easy to make, that as the first batch is baking, I am mixing up another.  Like this I have 48 Madeleines to freeze and I can have a "sweet" for many days to come!  Hint: they make a great little gift for the holidays especially an easy one since you can bake them in advance!
