Recipe: Curry Chicken

CHICKEN CURRY

1 CUP COOKED CHICKEN- DARK-LIGHT MEAT
2-3 TBLS EVOO
1 RED & 1 YELLOW PEPPER SLICED
1 MED ONION SLICED
1 BANANA (YOU CAN USE VERY RIPE)
2 STALKS CELERY CHOPPED
¼ CP RAISINS
1 APPLE DICED
¾ CP – 1 CP CHICKEN BROTH
½ CP WHITE WINE
¼ CP MILK OR CREAM
¼ CP ORANGE JUICE OR FRESH ORANGE SQUEEZED AND SLICES YOU CAN ADD
2 TSP CORN STARCH
1 TSP SALT
1 TBL HOT CURRY POWDER ( ACCORDING TO TASTE)
2 TBL SWEET CURRY POWDER

MAJOR GREY’S CHUTNEY
OR MAKE YOUR OWN WITH MARMALADE AND SPICES

USE LARGE SKILLET
SAUTE VEGGIES IN EVOO KEEP CRUNCHY
ADD WHITE WINE
SAUTE 5 MIN.
ADD ALL SPICES( CURRY)
ADD OJ
ADD CHICKEN
MIX CORN STARCH IN CHICKEN BROTH AND MILK
ADD TO PAN
STIR AND COOK TIL THICKENING
ADD APPLE,BANANA,RAISINS

SERVE OVER BROWN RICE
I USE 90 SEC PACKAGE FROM UNCLE BEN
