Recipe: "Sofrito" Spanish Seasoning Blend

This is my Sofrito version of the Spanish seasoning mixture.  I make enough of it to freeze in little cubes (my sister-in-law gave me that hint!) and ready to use for cooking. While this is not a true version of Sofrito, it works very well!  Use in chili (with or without meat or beans), guacamole or beans.  This is a very easy recipe but one you are sure to use over and over again!
Recipe for Sofrito
1 large green pepper cut into large pieces
1 plum tomato or 1 small tomato cut into large pieces
2 cloves garlic (chopped)
1 “Shallot” cut into large pieces (or a small onion)
1 large bunch cilantro (cut off just a tiny bit of the bottom stems) Roughly chop the leaves and remaining stems  (the stems have incredible flavor)

In food processor:
Mix (almost, but not totally) green pepper, tomato,  garlic and shallot (onion).
Add some of the cilantro, pulse a few times to blend in the cilantro
Continue adding cilantro and then finally puree all the ingredients.
Pour into an ice cube tray and freeze.  Once frozen, remove from the tray and place the frozen cubes into a baggie and store.
Use 1-2 Sofrito cubes in beans, chili or guacamole…I’ve also used it to help flavor some drippings from pan fried or oven roasted pork or chicken….you won't believe how much flavor it adds to your cooking!  Que Bueno!
