Recipe: Nanny's Lasagna

Lasagna Recipe  My father-in-law taught me how to make this lasagna and he learned it from his mother.  This is Christmas meal tradition and the lasagna recipe is just like Nanny used to make it!
The lasagna recipe makes TWO trays (13x9 cake pans).  We prepare it ahead of time and freeze them.  (I have posted pictures of the process below)
Ingredients:
2 lbs sausage loose (removed from casing) and cooked until browned
32 oz shredded mozzarella (I use the Polly-O and grate it myself)
32 oz ricotta cheese (Polly-O); add one egg, a pinch of salt & pepper mix well
1 lb chop meat for meat balls - cook your meat balls as usual, but make tiny ones  (I get 100+ meatballs from my mix of meat, dry bread, 4 eggs, salt, pepper and fresh chopped parsley
64 oz of Marina tomato sauce (Mrs. Muir's Organic ??  - I make my own sauce)
4 boxes of Barilla Lasagna sheets "No Bake" (you'll only use 3, but just in case you need extra for cracked or broken sheets)
4 oz grated parmesan cheese
Divide into two groups each the sausage, meatballs, shredded cheese, and ricotta cheese so your lasagna has an even amount of each ingredient!

Start with one tray at a time
Pour 3-4 Tablespoons of sauce onto the bottom of the baking pan
Layer the "No Bake" lasagna sheets in sections to cover the bottom, add sauce
Add a few meatballs, sausage, mozzarella, dollops of ricotta and grated cheese, top with a 2-3 Tablespoons of sauce
Layer more lasagna sheets in an opposite pattern, very gently press the pasta sheets down - they're fragile so be careful, now add 3-4 Tablespoons of sauce
Add a few meatballs, sausage, mozzarella, ricotta and grated cheese, top with 2-3 Tablespoons of sauce
Layer more lasagna sheets in an opposite pattern, gently press down add 3-4 Tablespoons of sauce
Add a few meatballs, sausage, mozzarella, ricotta and grated cheese, top with 2-3 Tablespoons of sauce
Layer more lasagna sheets in an opposite pattern, gently press, add 3-4 Tablespoons of sauce (this is the last layer of lasagna)
Add a few meatballs, sausage, mozzarella and grated cheese, top with 2-3 Tablespoons of sauce (there is NO ricotta on the top layer!)
Tray #1 is now complete with 4 layers of lasagna sheets.
Repeat the same process for Tray #2
One tray of lasagna will serve 8
TO FREEZE:  Wrap well in plastic wrap and then foil (or vice-a-versa).  To serve at a later date, remove from freeze day before and let thaw in refrigerator.
Bake 325 degrees  45 minutes (defrosted tray or freshly made)  Be sure to have extra sauce available for serving....enjoy Nanny's Lasagna!

One tray done - start on the next!
